(1)Prepare Amla: Deseed the fresh amla and chop it into small pieces.
(2)Sauté Amla: Heat oil in a pan. Add cumin seeds, mustard seeds, and asafoetida. Allow them to splutter. Add chopped amla pieces and sauté for 5-7 minutes until they become soft.
(3)Add Vegetables: Add chopped onions, green chilies, and grated ginger to the sautéed amla. Cook for another 3-4 minutes until the onions become translucent
(4)Blend: Allow the mixture to cool. Transfer it to a blender along with fresh coriander leaves and mint leaves. Blend into a smooth paste. Add water if needed to achieve the desired consistency.
(5)Seasoning: In the same pan, heat a little more oil. Add a few mustard seeds and cumin seeds for seasoning. Allow them to crackle. Pour the seasoning over the chutney and mix well.
(6)Adjust Seasoning: Add salt to taste and adjust the consistency by adding more water if necessary.
(7)Optional: For extra tanginess, you can add a tablespoon of lemon juice and mix well.
(8)Serve: Transfer the Amla Chutney to a serving bowl. It can be served with snacks, dosa, idli, or as a side dish with your main meals.
