Ingredients

  • 250 grams fresh amla (Indian gooseberry)
  • 1 cup sugar
  • 1/2 cup water
  • 1/2 teaspoon black salt (optional, for a sweet and savory flavor)
  • 1/2 teaspoon chaat masala (optional, for additional flavor)

How To Make

(1)Prepare Amla: Wash the amla thoroughly and deseed them. Cut each amla into small, bite-sized pieces.
(2)Boil Amla: In a pot, bring water to a boil. Add the amla pieces and boil for about 5 minutes. This helps to soften the amla.
(3)Drain and Cool: Drain the boiled amla and let it cool to room temperature.
(4)Prepare Sugar Syrup: In a separate saucepan, combine sugar and water. Heat over medium heat until the sugar dissolves completely.
(5)Boil Amla in Sugar Syrup: Add the boiled and cooled amla pieces to the sugar syrup. Cook on medium heat until the amla pieces become translucent and the syrup thickens. Stir occasionally to prevent sticking.
(6)Add Flavors (Optional): If using, add black salt and chaat masala to the syrup for a sweet and savory twist. Stir well to combine.
(7)Cool and Dry: Once the amla pieces are well-coated with the sugar syrup and have a candy-like consistency, turn off the heat. Allow the mixture to cool completely.
(8)Dry Amla Candy: Once cooled, spread the amla pieces on a plate or tray lined with parchment paper. Allow them to air dry for a few hours or overnight. The sugar coating will crystallize, giving the amla a candy-like texture
(9)Store: Store the Amla candy in an airtight container. It can be kept at room temperature for a few weeks.
